Discover Wild Flavors on Bornholm – A Nordic Foraging Experience
Bornholm’s unique location in the Baltic Sea and its rugged, hilly landscape provide the perfect setting for discovering a wide variety of wild flavors. The New Nordic cuisine’s embrace of wild herbs and berries has led to a rethinking of traditional Nordic cooking, merging past and present in a fresh, modern way.
Join us for a guided walk with Thomas Guldbæk through Bornholm’s natural landscapes and cultural history where you’ll learn about medicinal and culinary herbs. The walk takes you along the island’s stunning and varied coastline. Along the way, we’ll taste nature’s offerings and talk about how to use these wild treasures in both simple dishes and more refined gourmet experiences.
Using freshly foraged herbs and a few select local ingredients, we will also prepare small snacks together as we go.
After this, we will have private cooking class at Klostergaarden in Allinge with our local chef, Mathias Lehmann, where everyone is welcome to join in preparing the meal. Afterwards, will enjoy the lunch together featuring the dishes we have prepared, complemented by the best seasonal ingredients from Bornholm.
